Following huge success at the White Horse in Sudbury, the management team of Andy Piper and Dan Jones are expanding their company to two pubs by taking on village pub and bistro, the Bures Swan.

In the midst of recession, Andy Piper and Dan Jones took on the White Horse in 2009 with plans to turn the struggling town centre pub into a thriving live entertainment venue offering homemade, high quality food. Two years later and the pub is busier than ever and most nights packed to the rafters. The long-term business plan has been to build a chain of successful pubs so when the Greene King owned Bures Swan became available in November; it was the obvious choice for second venue. Bures will always hold a special place for the directors as it was where Andy and Dan were originally introduced when Andy met his long-term partner of seven years, who was good friends with Dan and has strong family links to the area.

Since taking on the pub and bistro, the restaurant area has been completely refurbished and the kitchen gutted and rebuilt. The second stage of development was finding the perfect chef in the form of Shaun Warner, 21 taking on his first head chef position after working at the Black Lion in Melford and the Orwell Hotel in Felixstowe. Shaun was a finalist in both the Academy of Food & Wine 2010 Future Stars of Gastronomy and Young Chef of the Year 2010. Shaun is complimented by his brother Ash Warner, who is taking on the role of restaurant manager.

Andy Piper, director says "We've spent some time refurbishing the Swan and making sure we have the right team. The pub now looks amazing, the kitchen is state of the art, Shaun is an amazing chef and is already dazzling customers with his culinary skills and Ash is that extra professional touch to provide the highest quality service".
